Easy Homemade Sausage Rolls
Crispy homemade sausage rolls with a simple puff pastry finish and a fun job for little helpers.
Garlicky mushrooms are cooked until richly savoury, folded through soft cheese and piled onto toasted bread. A short bake melts the topping and gives the edges a light golden finish.
Heat the oven to 200°C, or 180°C fan, and line a baking tray with baking paper.
Heat the olive oil in a frying pan over a medium heat. Cook the onion for 3–4 minutes until softened, then add the garlic and cook for 30 seconds.
Add the sliced mushrooms and smoked paprika. Cook for 6–8 minutes until the mushrooms have released their moisture and the pan is nearly dry. Season with the salt and black pepper.
Take the pan off the heat and stir in the soft cheese until the mushrooms are coated.
Spoon the mushroom mixture over the bread slices and place them on the tray. Bake for 8–10 minutes until the topping is hot and the edges of the toast are crisp.
Serve the toast while hot.
