Cheesy Mixed Bean Quesadillas

Cheesy Mixed Bean Quesadillas are a fast, budget-friendly meal with big flavour. A warmly spiced bean filling and gooey cheese are toasted inside tortillas until crisp.

Serve with salsa, sour cream or guacamole for an easy weeknight dinner.

Method

  1. Heat oil in a pan and soften onion for 5 minutes.
  2. Add garlic, cumin and paprika; cook for 1 minute.
  3. Stir in beans and tomato purée; cook 4–5 minutes, mashing some beans.
  4. Season and cool slightly.
  5. Spread filling over half the tortillas and top with cheese.
  6. Cover with remaining tortillas.
  7. Cook in a dry pan 2–3 minutes per side until golden and melted.
  8. Slice and serve hot.

Ingredients

  • Salt, to taste
  • 1 tsp Ground cumin
  • 1 tbsp Tomato purée
  • 1 tsp Paprika
  • 1 Onion finely diced
  • 2 cloves Garlic minced
  • 200 g Cheddar grated
  • 8 Tortillas medium
  • 2 x 400 g tins Mixed Beans drained
  • 1 tbsp Olive Oil

Notes

Season to taste and adjust timings slightly depending on your hob/oven.
