Recipe
Cheesy Chip-Shop Cod Parmo
Thick battered cod, smooth tomato sauce and a generous Cheddar topping make a bubbling oven bake with golden edges and a soft, saucy centre. A chip-shop-inspired supper for two, with chips or salad alongside.
Ingredients
For the fish bake
Optional cheese variation
Method
Heat the oven to the temperature stated on the cod packaging, often 200°C / 180°C fan. Arrange the frozen fillets on a baking tray with space between them and cook for the full packet time, turning if directed. Thick fillets may need about 25–35 minutes, or longer where specified. The centre must be piping hot, opaque and flaky before you assemble the bake.
With around 10 minutes of fish cooking left, pour the tomato sauce into a small saucepan. Add the oregano, garlic granules and chilli flakes if using, then season with black pepper. Stir over a gentle heat until the sauce is bubbling and thoroughly hot.
Spread approximately two-thirds of the hot sauce across the base of an ovenproof ceramic or metal dish large enough for both fillets. If you would like a cheesy base, reserve a little of the measured Cheddar and sprinkle it over this sauce.
Lift the fully cooked cod from the tray into the dish. Spoon the remaining sauce over parts of the fillets, leaving some golden batter visible around the edges.
Scatter the grated Cheddar over the fish. For the mozzarella variation, use 80g Cheddar and 30g mozzarella in total, including any cheese already scattered over the base.
Return the dish to the oven at 200°C / 180°C fan for 5–8 minutes. Check after 5 minutes and remove once the cheese has melted and browned in patches and the sauce is bubbling around the sides. The fish must already have been fully cooked before this finishing stage.
Serve immediately from the hot dish, using oven gloves to handle it. Expect a soft, saucy coating underneath the cheese and some crisp batter at the exposed edges. Chips, garlic bread or salad make suitable accompaniments.
Notes
Timing and packet guidance: Allow about 30–40 minutes cooking plus 5 minutes preparation, depending on your fillets. The displayed 45-minute total uses the upper end of that estimate. Follow longer packet timings when needed; cook the fish completely on its tray before it goes into the sauce.
A saucy finish: Keep some batter exposed, but spoon the remaining third of the sauce over parts of the fish before adding cheese. The coating softens where it meets the sauce; this is a cheesy fish bake rather than an all-over crisp fillet.
Air fryer alternative: Cook the frozen cod according to its packet air-fryer instructions and your appliance guidance until fully cooked and piping hot throughout. Warm the sauce separately and assemble in an air-fryer-rated ovenproof dish that fits with room for airflow. Finish at 180°C for about 5–8 minutes, checking until the cheese melts and the sauce bubbles. Keep the dish clear of the heating element and follow your model’s dish guidance.
Cheese and seasoning: Use the mozzarella substitution for extra stretch, or keep all Cheddar for a fuller flavour. Any cheese scattered onto the sauce should come from the measured quantity. Taste the sauce before adding extra seasoning, since the fish, sauce and cheese may already be salty.
Best eaten fresh: Serve immediately. Cool leftovers promptly, refrigerate in a covered container and eat within 24 hours, reheating once until piping hot throughout. Check product labels for allergens; battered cod, cheese and sauce normally contain fish, wheat and milk, with other allergens possible.
About this recipe
This oven-baked cod Parmo brings together thick battered fish, a rich tomato sauce and plenty of melted Cheddar. It is a tomato-based twist on the takeaway favourite rather than the traditional white-sauce version. Some sauce goes over the fish as well as underneath, giving the bake a soft, cheesy middle with golden batter still showing around the edges.
The fish cooks on a tray first, while the sauce warms separately. Once assembled in an ovenproof dish, it needs only a short final bake to melt the cheese and bring the sauce to a bubble. Serve straight from the dish while it is hot, with chunky chips, garlic bread or a simple green salad.
