Camembert Mac and Cheese

This rich, comforting macaroni cheese uses camembert for a savoury, creamy sauce, finished with cheddar and golden breadcrumbs.

Cook the pasta just shy of tender so it stays firm while the dish bakes.

  1. Heat the oven to 200°C, or 180°C fan. Cook the macaroni in salted boiling water until just shy of tender, then drain.

  2. Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1 minute, then whisk in the milk a little at a time until smooth.

  3. Simmer the sauce for 4–5 minutes, stirring, until thick enough to coat the back of a spoon. Stir in the camembert, cheddar and Dijon mustard until melted, then season with salt and pepper.

  4. Fold the macaroni through the sauce and transfer to a greased baking dish. Scatter over the breadcrumbs.

  5. Bake for 20–25 minutes until bubbling and golden. Rest for 5 minutes before serving.
