- 250 g Broccoli Florets blanched
- 1 tsp Dijon Mustard

- 1 sheet Shortcrust Pastry
- 180 g Mature Cheddar grated
- 100 ml Whole Milk
- 250 ml Double cream
- 4 Eggs
Method

- Heat the oven to 190°C (170°C fan) and line a quiche tin with pastry.
- Blind bake the pastry case for 15 minutes until lightly golden.
- Arrange broccoli and cheddar in the case.
- Whisk eggs, cream, milk, mustard, nutmeg, salt and pepper, then pour over the filling.
- Bake for 30–35 minutes until just set and golden on top.
