  • 250 g Broccoli Florets blanched
  • 1 tsp Dijon Mustard

  • 1 sheet Shortcrust Pastry
  • 180 g Mature Cheddar grated
  • 100 ml Whole Milk
  • 250 ml Double cream
  • 4 Eggs

Method

  1. Heat the oven to 190°C (170°C fan) and line a quiche tin with pastry.
  2. Blind bake the pastry case for 15 minutes until lightly golden.
  3. Arrange broccoli and cheddar in the case.
  4. Whisk eggs, cream, milk, mustard, nutmeg, salt and pepper, then pour over the filling.
  5. Bake for 30–35 minutes until just set and golden on top.
