  2. Line a tart tin with shortcrust pastry and blind bake for 10–12 minutes.
  3. Blanch broccoli briefly, drain, and pat dry.
  4. Whisk eggs, cream, mustard, nutmeg, salt, and pepper.
  5. Scatter broccoli and cheddar in the pastry case.
  6. Pour over the egg mixture and level gently.
  7. Bake 30–35 minutes until set and lightly golden.
  8. Cool slightly before slicing and serving.

  • 1 sheet Shortcrust Pastry
  • 180 g Mature Cheddar grated
  • 100 ml Whole Milk
  • 250 ml Double cream
  • 4 Eggs
