  • 300 g Potatoes cooked and sliced
  • 80 g Mature Cheddar grated
  • 1 Red Onion thinly sliced
  • 8 Eggs
  • 250 g Black Pudding sliced
  • 1 tbsp Parsley chopped
  • 1 tbsp Olive Oil
  • 60 ml Whole Milk

  1. Heat the grill and warm an ovenproof frying pan over a medium heat.
  2. Fry black pudding and onion in olive oil for 4–5 minutes, then add sliced potatoes.
  3. Whisk eggs with milk, cheddar, parsley, salt and pepper.
  4. Pour egg mixture into the pan and cook gently until the edges are set.
  5. Finish under the grill for 3–5 minutes until puffed and golden.
