- 300 g Potatoes cooked and sliced
- 80 g Mature Cheddar grated
- 1 Red Onion thinly sliced
- 8 Eggs
- 250 g Black Pudding sliced
- 1 tbsp Parsley chopped

- 60 ml Whole Milk

- Heat the grill and warm an ovenproof frying pan over a medium heat.
- Fry black pudding and onion in olive oil for 4–5 minutes, then add sliced potatoes.
- Whisk eggs with milk, cheddar, parsley, salt and pepper.
- Pour egg mixture into the pan and cook gently until the edges are set.
- Finish under the grill for 3–5 minutes until puffed and golden.
