This quick black bean sauce brings fermented black beans, soy and aromatics together in a glossy, savoury coating for stir-fried vegetables, noodles or meat.

Thicken it at the end with cornflour, then adjust the balance with rice vinegar and sesame oil.

  1. Mix the soy sauce, stock, rice vinegar, brown sugar and cornflour slurry in a small bowl until smooth.

  2. Heat the sesame oil in a small saucepan over medium heat. Add the garlic, ginger and fermented black beans, and cook for 1 minute until aromatic.

  3. Pour in the sauce mixture and bring it to a gentle simmer, stirring constantly until glossy and thick enough to coat a spoon, about 2–3 minutes.

  4. Taste and adjust with a little more rice vinegar or sugar if needed, then use hot with a stir-fry or noodles.
