Beef Stir-Fry with Asparagus and Mangetout

This quick beef stir-fry pairs tender strips of beef with crisp asparagus and mangetout in a savoury sake, soy and ginger glaze.

A little sesame oil, toasted sesame seeds and fresh coriander finish the dish with nutty fragrance and freshness.

  1. Put the beef in a bowl with the sake, soy sauce, ginger, garlic, chilli and brown sugar. Toss to coat and leave for 15 minutes while you prepare the vegetables.

  2. Heat a wok or large frying pan over a high heat. Add the cooking oil, then lift the beef from the marinade and stir-fry for 2 minutes until browned but still tender. Transfer to a plate.

  3. Add the asparagus and sugar snap peas to the hot wok and stir-fry for 3 minutes, keeping them bright and slightly crisp.

  4. Return the beef and any resting juices to the wok. Toss for 1 minute, then add the sesame oil and season with salt and freshly ground black pepper.

  5. Divide between two bowls and finish with the sesame seeds and chopped coriander.
