These small banana doughnut balls are quick to mix and fry, with a tender middle and a crisp golden shell. Serve them warm as a sweet treat.

  1. Whisk the flour, baking powder, salt and caster sugar in a bowl.

  2. Mash the bananas and beat in the egg, vanilla extract and milk until smooth.

  3. Stir the banana mixture into the dry ingredients to make a thick, scoopable batter.

  4. Heat the sunflower oil in a deep pan to 170°C. Fry heaped teaspoons of batter in batches for 3–4 minutes, turning carefully, until puffed and golden.

  5. Lift out with a slotted spoon, drain on kitchen paper and roll in a little caster sugar while warm.
