Bacon-Wrapped Cheese Bombs

These small bacon-wrapped cheese bites are crisp at the edges and gooey in the centre. Garlic powder adds savoury depth without taking attention away from the bacon and melted mozzarella.

They are best served warm after a short rest, when the cheese is still soft but less likely to run out at the first bite.

  1. Heat the oven to 200°C. Line a rimmed baking tray with foil and set a wire rack over it if you have one.

  2. Pat the mozzarella dry, then cut it into 12 equal cubes.

  3. Lay the bacon flat and sprinkle both sides with garlic powder. Place a cheese cube on each piece and wrap the bacon tightly around it, tucking the ends underneath.

  4. Arrange the bacon bombs seam-side down on the rack or lined tray, leaving a little space between each one.

  5. Bake for 18–22 minutes, until the bacon is deeply golden and crisp. Watch closely towards the end as some cheese may bubble out.

  6. Leave to rest for 3–5 minutes before serving warm.
