Apricot and Marzipan Crumble

Apricot and Marzipan Crumble pairs sweet-tart apricots with rich marzipan and a crisp flour-butter topping enriched with ground almonds. As it bakes, the fruit softens and turns syrupy while the crumble browns for a classic contrast of textures.

It is an easy oven dessert that works well for family-style serving. Spoon it warm into bowls and finish with hot custard or cream for a balanced, comforting pudding.

  1. Heat oven to 190°C.
  2. Toss fruit with sugar and tip into a baking dish.
  3. Rub butter into flour, then stir in almonds and diced marzipan.
  4. Scatter topping over the fruit.

Ingredients

  • 50 g Ground almonds
  • 600 g Apricots halved
  • 45ml Caster Sugar
  • 100 g Marzipan diced
  • 100 g Unsalted butter cold cubed
  • 150 g Plain Flour

Notes

Adjust the sugar slightly depending on how sweet or tart your apricots are.
Keep the butter cold when rubbing into the flour to get a better crumble texture.
Fresh apricots work well; if they are very ripe, reduce bake time slightly and check early.
