Almond Delight Cookies

These almond delight cookies are simple, fragrant, and wonderfully moreish. They bake with lightly crisp edges while staying soft in the middle, with a gentle nutty sweetness in every bite.

Perfect for tea time, lunchboxes, or a quick homemade treat, they come together with everyday ingredients and keep well for several days in an airtight container.

Method

  1. Heat oven to 180°C (160°C fan) and line a baking tray.
  2. Cream butter and sugar until pale and fluffy.
  3. Beat in egg and vanilla extract.
  4. Fold in flour, baking powder, and ground almonds to form a soft dough.
  5. Scoop small balls onto the tray, leaving space between each.
  6. Flatten lightly and top with flaked almonds if using.
  7. Bake 10–12 minutes until edges are lightly golden.
  8. Cool on tray for 5 minutes before transferring to a rack.

  • 180 g Plain Flour
  • 120 g Light brown sugar
  • 1 tsp Vanilla extract
  • 0.5 tsp Baking powder
  • 80 g Ground almonds
  • 120 g Unsalted butter softened
  • 50 g Flaked Almonds
  • 1 Egg

Notes
