All Butter Apple, Cinnamon & Sultana Brioche Buns are rich, tender and packed with warming bakery flavours. The buttery brioche dough stays soft and pillowy, while the apple and sultana filling brings natural sweetness and gentle spice.

  1. Prepare and measure all ingredients before you begin.
  2. Cook the aromatics in a little oil over a medium heat until softened.
  3. Add the main ingredients and cook until properly coloured.
  4. Add liquid components and simmer until cooked through and well combined.
  5. Check seasoning and serve hot.

  • 60 g Sultanas
  • 1 Apple peeled and finely diced
  • 1/2 tsp Salt
  • 1 Egg
  • 20 g Brown sugar
  • 70 g Unsalted butter softened
  • 7 g Fast-action Yeast
  • 20 g Butter melted
  • 45 g Caster Sugar
  • 160 ml Milk warm
  • 1 tsp Ground Cinnamon
  • 35 g Rolled Oats
  • 350 g Strong white bread flour
  • 20 g Plain Flour

Notes

Let the buns cool slightly so the filling sets before serving.

A little egg wash before baking gives extra shine.
