BBQ Pulled Pork Sandwiches
Slow-cooked pulled pork with smoky barbecue sauce, crunchy coleslaw and soft brioche buns.
This spicy chipotle bacon butty keeps the big flavours of a café-style sandwich but makes them practical at home: crisp bacon, a quick smoky ketchup and toasted buns.
The bacon butter is optional but worth it if you want extra richness. Make the ketchup ahead and breakfast comes together quickly.
Cook the bacon in a frying pan until crisp, then lift out onto kitchen paper and keep a teaspoon of the rendered fat in the pan.
Beat a little finely chopped crisp bacon into the softened butter with a pinch of smoked paprika, then set aside.
Soften the onion in the bacon fat for 6-8 minutes, add the garlic, chipotle paste and tomato purée, then cook for 1 minute.
Stir in the passata, cider vinegar, brown sugar and smoked paprika, then simmer until thick and glossy. Season to taste.
Toast the brioche buns, spread with bacon butter, pile in the crisp bacon and spoon over the warm chipotle ketchup before closing the sandwiches.
