Crispy bacon, soft onion and garlic form a savoury base, while cream and Parmesan create a smooth sauce that clings to every strand of pasta. The result is rich but balanced, with enough depth for a family meal and enough simplicity for a busy weeknight.

A little reserved pasta water helps the sauce stay glossy and light rather than heavy. Finish with cracked black pepper and extra Parmesan, then serve straight away while hot and creamy. Pair it with a crisp salad or steamed greens to round out the plate.

  1. Cook the pasta in salted boiling water until al dente, then reserve a little pasta water and drain.

  2. Heat olive oil in a large pan and cook the bacon until crisp.

  3. Add onion and cook for 4–5 minutes until softened, then stir in garlic for 1 minute.

  4. Lower the heat and add the cream, stirring gently until just simmering.

  5. Stir in the Parmesan until melted and smooth.

  6. Add the drained pasta and toss to coat, loosening with a splash of reserved pasta water if needed.

  7. Season with sea salt, black pepper and a little lemon juice if using.

  8. Serve immediately with extra Parmesan and optional chopped parsley.
