Sausage & Egg Skillet with Cheesy Baked Beans & Roast Potatoes

- Preheat your oven to 200°C (400°F).
- Dice the potatoes and toss them with oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
- While the potatoes are roasting, slice the sausages and onions. Fry the sausages in a large skillet over medium heat until browned. Remove and set aside.
- In the same skillet, add the onions and cook until caramelized. Add the baked beans and sausages back to the skillet. Warm through.
- Make four wells in the bean mixture and crack an egg into each. Cover and cook until the eggs are set to your liking.
- Sprinkle shredded cheese over the beans and eggs in the last few minutes of cooking, allowing it to melt.
- Serve the skillet mixture with the roasted potatoes on the side.
