Sausage & Egg Skillet with Cheesy Baked Beans & Roast Potatoes

A warm and hearty skillet meal featuring sausages, sunny side up eggs, cheesy baked beans, and roasted potatoes. Perfect for a comforting supper.

  1. Preheat your oven to 200°C (400°F).
  2. Dice the potatoes and toss them with oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
  3. While the potatoes are roasting, slice the sausages and onions. Fry the sausages in a large skillet over medium heat until browned. Remove and set aside.
  4. In the same skillet, add the onions and cook until caramelized. Add the baked beans and sausages back to the skillet. Warm through.
  5. Make four wells in the bean mixture and crack an egg into each. Cover and cook until the eggs are set to your liking.
  6. Sprinkle shredded cheese over the beans and eggs in the last few minutes of cooking, allowing it to melt.
  7. Serve the skillet mixture with the roasted potatoes on the side.
