Sausage & Egg Skillet with Cheesy Baked Beans & Roast Potatoes

This all-in-one skillet is hearty, comforting and ideal for a family supper. Crisp roast potatoes, browned sausages, baked beans and eggs are finished with melted cheese for a rich, satisfying meal.

Serve straight from the pan with crusty bread.

  1. Heat oven to 200°C and roast potatoes with oil, salt and paprika for 35 minutes.
  2. Meanwhile brown sausages in an ovenproof skillet until cooked through.
  3. Remove sausages, then soften onion in the same pan.
  4. Stir in baked beans and simmer for 3–4 minutes.
  5. Slice sausages and return to the skillet.
  6. Make 4 wells and crack in the eggs.
  7. Scatter over cheddar and add roast potatoes around the edge.
  8. Bake 8–10 minutes until eggs are set to your liking.

Ingredients

  • Salt, to taste
  • 8 Sausages
  • 700 g Potatoes cut into chunks
  • 4 Egg
  • 2 x 400 g tins Baked Beans
  • 1 tsp Paprika
  • 120 g Cheddar grated
  • 1 Onion sliced
  • 2 tbsp Olive Oil

Notes

Season to taste and adjust timings slightly depending on your hob/oven.
