Harissa Roasted Vegetables
Roasted harissa vegetables with charred edges, including broccoli, aubergine, and courgette, finished with lemon and fresh coriander.
Roasted turnips with honey and thyme are an easy way to turn a humble vegetable into a standout side. Oven roasting brings out natural sweetness, while honey and thyme add a fragrant, savoury balance.

Heat oven to 210°C (190°C fan).
Toss turnip wedges with olive oil, salt, and black pepper on a baking tray.
Roast for 20 minutes, turning once halfway.
Mix honey and thyme (and melted butter if using), then drizzle over the turnips.
Return to oven for 10–15 minutes until golden and caramelised at the edges.
Taste and adjust seasoning, then serve warm.
