Roasted Turnips with Honey & Thyme

Roasted turnips with honey and thyme are an easy way to turn a humble vegetable into a standout side. Oven roasting brings out natural sweetness, while honey and thyme add a fragrant, savoury balance.

They pair beautifully with roast chicken, lamb, or festive mains, and are just as good alongside hearty vegetarian dishes.

Ingredients

  • 2 tbsp Olive Oil
  • Salt, to taste
  • 1 tsp Thyme fresh leaves or dried
  • 20 g Butter optional, for richness
  • 700 g Turnip peeled and cut into wedges
  • Black Pepper, to taste
  • 1.5 tbsp Honey

Method

  1. Heat oven to 210°C (190°C fan).
  2. Toss turnip wedges with olive oil, salt, and black pepper on a baking tray.
  3. Roast for 20 minutes, turning once halfway.
  4. Mix honey and thyme (and melted butter if using), then drizzle over the turnips.
  5. Return to oven for 10–15 minutes until golden and caramelised at the edges.
  6. Taste and adjust seasoning, then serve warm.

Notes

Cut turnips to an even size for consistent roasting.

Add honey in the second half of roasting to prevent burning.

Finish with a pinch of flaky salt before serving for extra contrast.
