One-Pan Taco Rice Dinner

A quick and delicious one-pan meal featuring ground beef, taco seasoning, rice, chicken broth, and black beans. Perfect for a busy weeknight dinner, this dish is packed with flavour and easy to prepare.

  1. In a large pan, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the taco seasoning to the ground beef and stir to combine.
  3. Add the rice, chicken broth, black beans, corn, and diced tomatoes to the pan. Stir well.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is fully cooked.
  5. Once the rice is cooked, remove the pan from the heat and let it sit, covered, for an additional 5 minutes.
  6. Fluff the rice with a fork and top with grated cheddar cheese, sliced jalapeños, and chopped coriander.
  7. Serve hot and enjoy!

  • 500g Beef minced
  • 2 tbsp taco seasoning
  • 250g long-grain rice rinsed
  • 500ml chicken stock
  • 1 x 400g tin black beans drained and rinsed
  • 150g sweetcorn drained
  • 1 x 400g tin Tomato diced
  • 100g Cheddar Cheese grated
  • 2 tbsp jalapeños sliced, optional
  • 1 handful Coriander chopped fresh, for garnish

Notes

For added flavour, consider adding chopped onions and bell peppers when cooking the ground beef. You can also top the dish with sour cream or guacamole for extra richness.
