A quick and delicious one-pan meal featuring ground beef, taco seasoning, rice, chicken broth, and black beans. Perfect for a busy weeknight dinner, this dish is packed with flavour and easy to prepare.

  1. In a large pan, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the taco seasoning to the ground beef and stir to combine.

  3. Add the rice, chicken broth, black beans, corn, and diced tomatoes to the pan. Stir well.

  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is fully cooked.

  5. Once the rice is cooked, remove the pan from the heat and let it sit, covered, for an additional 5 minutes.

  6. Fluff the rice with a fork and top with grated cheddar cheese, sliced jalapeños, and chopped coriander.
