Gypsy Toast

Gypsy toast is a quick pan-fried breakfast made by dipping bread in a lightly sweet egg mixture and frying until golden.

Serve with berries, honey or a dusting of cinnamon sugar for an easy morning treat.

Ingredients

  • a pinch Sea Salt
  • 4 slices Thick White Bread or brioche
  • 0.5 tsp Ground Cinnamon plus extra to serve
  • 80ml Milk
  • 20g Unsalted butter for frying
  • 2 Eggs large
  • 1 tbsp Caster Sugar

Method

  1. Whisk eggs, milk, sugar, cinnamon and a pinch of salt in a shallow dish.
  2. Heat half the butter in a non-stick frying pan over medium heat.
  3. Dip two slices of bread in the egg mixture for a few seconds on each side.
  4. Fry for 2–3 minutes per side until golden and cooked through.
  5. Repeat with the remaining butter and bread slices.
  6. Serve hot with extra cinnamon sugar, berries or a drizzle of honey.

Notes

Use slightly stale bread so it soaks up the egg mixture without falling apart.

Keep the heat medium so the centre cooks through before the outside gets too dark.
