Method

5m7m12m
  1. Heat a grill pan or barbecue to medium-high.
  2. Trim the asparagus (snap off woody ends).
  3. Toss asparagus with olive oil, salt and black pepper.
  4. Grill 5–7 minutes, turning occasionally, until tender and charred in spots.
  5. Finish with lemon zest and a squeeze of lemon juice. Add parmesan if using.
  6. Serve immediately.

Ingredients

  • Parmesan optional, to serve
  • Salt, to taste
  • Black Pepper, to taste
  • 500 g Asparagus trimmed
  • 1 Lemon zest and juice
  • 30ml Olive Oil

Notes

Snap the ends: asparagus naturally breaks where the woody part starts.

Oven option: roast at 220°C for 8–10 minutes if you don’t want to grill.

Finish: parmesan, chilli flakes, or toasted almonds all work well.
