Delightful Nut & Berry Muffins

Mouth-watering muffins combined with a selection of nuts and berries, with a hint of cinnamon, and topped with crunchy granola for a wonderful texture.

Serve while hot and enjoy.

Ingredients

  • 250ml Milk
  • 100g Butter melted

  1. Preheat your oven to 180C/350F/Gas 4. Arrange paper liners in a muffin tray.
  2. In a broad bowl, combine the sifted self-raising flour, baking powder, salt, and ground cinnamon. Stir in the light brown sugar next.
  3. In another bowl, combine milk, beaten free-range eggs, and melted butter. Whisk these ingredients well.
  4. Gradually pour the wet mixture into the dry mixture and swiftly blend them together. Stir in toasted hazelnuts, dried cherries, and dried cranberries into this mix.
  5. Evenly distribute the batter into 12 muffin cases. Add a sprinkle of granola on top of each muffin for added crunch.
  6. Bake for about 20-25 minutes or until a skewer inserted into the muffins comes out clean.
  7. Allow the muffins to cool in the tin for about five minutes. Serve warm or at room temperature, as preferred.
