Delightful Nut & Berry Muffins
Mouth-watering muffins combined with a selection of nuts and berries, with a hint of cinnamon, and topped with crunchy granola for a wonderful texture.
Serve while hot and enjoy.
Ingredients
- 250ml Milk
- 100g Butter melted

- Preheat your oven to 180C/350F/Gas 4. Arrange paper liners in a muffin tray.
- In a broad bowl, combine the sifted self-raising flour, baking powder, salt, and ground cinnamon. Stir in the light brown sugar next.
- In another bowl, combine milk, beaten free-range eggs, and melted butter. Whisk these ingredients well.
- Gradually pour the wet mixture into the dry mixture and swiftly blend them together. Stir in toasted hazelnuts, dried cherries, and dried cranberries into this mix.
- Evenly distribute the batter into 12 muffin cases. Add a sprinkle of granola on top of each muffin for added crunch.
- Bake for about 20-25 minutes or until a skewer inserted into the muffins comes out clean.
- Allow the muffins to cool in the tin for about five minutes. Serve warm or at room temperature, as preferred.
