Delightful Nut & Berry Muffins

Delightful Nut & Berry Muffins are soft, fruity and lightly crunchy from toasted nuts. They are simple to mix and bake, making them ideal for weekend baking and packed lunches.

  1. Heat oven to 190°C and line a 12-hole muffin tin.
  2. Whisk flour, baking powder and sugar in a bowl.
  3. In another bowl whisk eggs, milk, melted butter and vanilla.
  4. Fold wet ingredients into dry until just combined.
  5. Fold in berries and nuts gently.
  6. Divide mixture between muffin cases.
  7. Bake 20–24 minutes until risen and golden.
  8. Cool on a rack before serving.

Ingredients

  • 180 g Mixed Berries fresh or frozen
  • 90 g Unsalted butter melted
  • 1 tsp Vanilla extract
  • 120 g Caster Sugar
  • 80 g Mixed Nuts chopped
  • 280 g Plain Flour
  • 2 tsp Baking powder
  • 180 ml Milk
  • 2 Egg

Notes

Season to taste and adjust timings slightly depending on your hob/oven.
