Ingredients

  • 2 oz Plain Flour plus extra for dusting
  • 300g/10½oz Butter cubed and chilled, plus extra for greasing
  • 100g/3½oz Caster Sugar
  • 90g/3¼oz Icing Sugar
  • 25g/1oz Plain Flour
  • 125g/4½oz Butter at room temperature
  • 125g/4½oz Icing Sugar

Method

  1. To make the sweet pastry, combine the dry ingredients, add butter and eggs, and chill the dough.
  2. Roll out the pastry and line the cake tin, then blind bake.
  3. Prepare the frangipane and spread half of the cherry filling over the baked pastry.
  4. Top with frangipane mixture and bake until golden.
  5. Make the cream cheese topping, cover the cheesecake, and refrigerate overnight.
  6. Decorate with remaining cherry filling, cherries, and almonds before serving.

Notes
