Homemade Italian Minestrone Soup
A hearty Italian minestrone with vegetables, beans and pasta in a rich tomato broth for an easy family dinner.
This is pure comfort: cooked spaghetti tossed in a rich tomato sauce, baked into a sliceable “pie” with loads of mozzarella and parmesan.
The twist is the garlic bread crust — baguette slices brushed with herby garlic butter and baked until crisp and golden.
Preheat the oven to 180°C.
Mix cooked spaghetti with a tomato-based pasta sauce and some cooked ground meat if desired.
Transfer the spaghetti mix to a pie dish.
Mix soft butter with crushed garlic, herbs, and salt, and spread over slices of baguette.
Arrange the buttered bread around the edge of the pie dish, butter side up, to form a crust.
Generously sprinkle grated cheese over the spaghetti and place a few cheese slices on the bread.
Bake for 20-25 minutes until the cheese is melted and golden brown.
Let cool for 5 minutes before slicing.
Keep cooking
