Baked Lemon Herb Haddock

This baked lemon herb haddock is a light, flavour-packed fish dinner that comes together quickly with minimal prep.

Haddock fillets are brushed with olive oil, lemon, garlic, parsley, and thyme, then oven-baked until flaky and tender. Serve with steamed greens, new potatoes, or a crisp salad.

  1. Heat the oven to 200°C (180°C fan). Line a baking tray with baking parchment.
  2. Pat the haddock fillets dry and place on the tray. Drizzle with olive oil.
  3. In a small bowl, mix lemon zest, lemon juice, garlic, chopped parsley, thyme, salt, and black pepper.
  4. Spoon the lemon-herb mixture over the fillets. Top with lemon slices.
  5. Bake for 12–15 minutes, until the fish flakes easily with a fork. Serve immediately.

  • 2 Garlic Cloves finely minced
  • 1 tsp Fresh Thyme chopped
  • 2 tbsp Olive Oil
  • 2 tbsp Parsley finely chopped
  • 1/2 Lemon sliced, for topping
  • 1 Lemon zested and juiced
  • 1/4 tsp Black Pepper
  • 4 Haddock fillets skinless
  • 1/2 tsp Salt
