Cheesy Pasta & Peas with Crispy Bacon
Creamy cheddar pasta with sweet peas and crisp bacon — a quick, comforting tea that lands on the table in about half an hour.
Ripe avocado makes a smooth, dairy-free sauce for this easy pasta dish. Mint, lemon and peas keep it fresh, while a little chilli adds gentle heat.
The sauce needs no cooking: toss it through the hot pasta just before eating so it stays bright and creamy.
Bring a large pan of salted water to the boil. Cook the pasta for 2 minutes less than the packet instructions, then add the peas and cook for the final 2 minutes.
Scoop out a mugful of pasta water, then drain the pasta and peas well.
Put the avocado, mint, lemon zest and juice, garlic, olive oil, salt, pepper and 4 tablespoons of the reserved pasta water in a blender. Blend until smooth, adding another splash of water if needed.
Return the pasta and peas to the warm pan, off the heat. Add the avocado sauce and toss until every piece is coated, loosening with a little more pasta water if necessary.
Divide between two bowls and finish with the sliced chilli and a few extra mint leaves.
