Huli huli chicken is a Hawaiian barbecue classic built around a sweet-savoury glaze of pineapple juice, soy sauce, ginger and garlic. This version uses chicken thighs for juicy meat and plenty of caramelised edges from the grill.

Serve it with rice, grilled pineapple or a crisp slaw for an easy summer dinner with bold, smoky flavour.

  1. Whisk the pineapple juice, soy sauce, light brown sugar, ketchup, rice vinegar, ginger and garlic together until the sugar has dissolved. Pour 120ml into a small pan and set it aside for basting.

  2. Put the chicken thighs in a large bowl or bag, pour over the remaining marinade and chill for at least 4 hours or overnight.

  3. Heat the grill to medium-high. Lift the chicken from the marinade, shake off the excess and grill skin-side down for 8 to 10 minutes until well marked.

  4. Turn the chicken, cook for another 8 to 10 minutes, then start brushing with the reserved marinade. Keep turning and basting for 8 to 12 minutes more until the chicken is sticky, lightly charred and cooked through.

  5. Rest for 5 minutes, then scatter over the spring onions and toasted sesame seeds before serving.
