Aromatic Vegetarian Tagine

A hearty and flavourful Moroccan-inspired dish, this Vegetarian Tagine combines a variety of vegetables and spices, slow-cooked to perfection. It's a warming, aromatic meal that's perfect for a cozy dinner.

Ingredients

  • 2 Carrot chopped, large
  • 1 Onion chopped, large
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic minced
  • 500 ml Vegetable Stock
  • 400g can Tomato Chopped
  • 1 teaspoon Coriander ground
  • 1 Courgette chopped
  • 1/2 teaspoon Ginger ground

Method

  1. Heat the olive oil in a large tagine or heavy-based pan. Add the onion and garlic, cooking until softened.
  2. Stir in the cumin, coriander, cinnamon, and ginger, cooking for another minute until fragrant.
  3. Add the chopped tomatoes, chickpeas, carrots, sweet potato, courgette, and bell pepper to the pan.
  4. Pour in the vegetable stock and bring to a simmer. Cover and cook on low heat for 30 minutes.
  5. Add the dried apricots and continue to simmer for another 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh coriander and flaked almonds.

Notes

This tagine can be adapted to include any vegetables you have on hand. Serve with couscous or crusty bread for a complete meal.
