Aromatic Vegetarian Tagine
A hearty and flavourful Moroccan-inspired dish, this Vegetarian Tagine combines a variety of vegetables and spices, slow-cooked to perfection. It's a warming, aromatic meal that's perfect for a cozy dinner.
Ingredients
- 2 Carrot chopped, large
- 1 Onion chopped, large
- 2 tablespoons Olive Oil
- 2 cloves Garlic minced
- 500 ml Vegetable Stock
- 400g can Tomato Chopped
- 1 teaspoon Coriander ground
- 1 Courgette chopped
- 1/2 teaspoon Ginger ground
Method
- Heat the olive oil in a large tagine or heavy-based pan. Add the onion and garlic, cooking until softened.
- Stir in the cumin, coriander, cinnamon, and ginger, cooking for another minute until fragrant.
- Add the chopped tomatoes, chickpeas, carrots, sweet potato, courgette, and bell pepper to the pan.
- Pour in the vegetable stock and bring to a simmer. Cover and cook on low heat for 30 minutes.
- Add the dried apricots and continue to simmer for another 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh coriander and flaked almonds.
Notes
This tagine can be adapted to include any vegetables you have on hand. Serve with couscous or crusty bread for a complete meal.
