Air-Fried Brioche with Custard and Raspberries

This air-fried brioche is a fast café-style breakfast or pudding for two: buttery bread, a light egg and yoghurt custard, and sharp raspberries to cut through the sweetness.

The air fryer gives the brioche crisp edges while the middle stays spoon-soft, so it feels special without needing a full oven or a long bake.

  1. Preheat the air fryer to 175°C and lightly butter a small piece of baking parchment or the crisper tray.

  2. Press the centre of each brioche slice down with the back of a spoon, leaving a raised border so the custard has somewhere to sit.

  3. Whisk the egg, yoghurt, honey and vanilla in a small bowl until smooth and pourable.

  4. Spoon the custard into the hollowed brioche centres, then scatter the raspberries over the top.

  5. Air-fry for 7–9 minutes, until the brioche edges are golden and the custard is just set in the middle.

  6. Finish with a little extra honey and a dusting of icing sugar if liked, then eat while the brioche is still warm and crisp.
