  1. Mix flour and water and rest (autolyse) for 30 minutes.
  2. Add starter and salt; mix until incorporated.
  3. Bulk ferment 3–5 hours, doing stretch-and-folds every 30 minutes for the first 2 hours.
  4. Shape the dough and proof in a floured basket 1–2 hours at room temp or overnight in the fridge.
  5. Preheat oven with a Dutch oven to 240°C.
  6. Score the loaf, bake covered 20 minutes, then uncovered 20–25 minutes until deep golden.
  7. Cool fully before slicing.

  • 500 g Strong white bread flour
  • 100 g Sourdough starter active
  • 350 g Water
  • 10 g Salt

Notes

Substitute ground beef with ground turkey or a plant-based alternative for a lighter option. Add other veggies like mushrooms or spinach for extra nutrition.

For picky eaters, keep it simple with just cheese and beef.
