This fun and satisfying Garbage Bread recipe is a playful take on stromboli or calzone, filled with anything you'd toss on a pizza but rolled into one easy-to-eat package. Perfect for game nights, family gatherings, or making the most of leftovers, it's versatile and packed with cheesy goodness enclosed in a golden crust.
Ingredients
- 500 g Strong white bread flour
- 100 g Sourdough starter active
- 350 g Water
- 10 g Salt

- Mix flour and water and rest (autolyse) for 30 minutes.
- Add starter and salt; mix until incorporated.
- Bulk ferment 3–5 hours, doing stretch-and-folds every 30 minutes for the first 2 hours.
- Shape the dough and proof in a floured basket 1–2 hours at room temp or overnight in the fridge.
- Preheat oven with a Dutch oven to 240°C.
- Score the loaf, bake covered 20 minutes, then uncovered 20–25 minutes until deep golden.
- Cool fully before slicing.
Notes
Substitute ground beef with ground turkey or a plant-based alternative for a lighter option. Add other veggies like mushrooms or spinach for extra nutrition. For picky eaters, keep it simple with just cheese and beef. Prepare ahead and refrigerate before baking, letting it come to room temperature before baking.
