Fiesta Chicken Fajitas

Ingredients
- Guacamole, to serve
- 1 Onion sliced, large
- Onion
- small handful Fresh coriander chopped
- Olive Oil
- Garlic
- Salsa, to serve
- 2 Chicken Breasts sliced into strips
- Sour Cream, to serve
- 2 Mixed Peppers sliced
- Black Pepper
- 8 Tortillas
- 2 tbsp Fajita Seasoning
- 1 Lime cut into wedges
- Salt

- Preheat your oven to 220°C.
- Slice the chicken breasts into strips and toss with fajita seasoning.
- Slice the peppers and onions, and spread them out on a sheet pan.
- Add the seasoned chicken strips to the sheet pan with the vegetables.
- Roast in the oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- Warm the tortillas in the oven during the last few minutes of cooking.
- Serve the chicken and vegetables with warm tortillas, guacamole, salsa, and a dollop of sour cream.
Notes
For a vegetarian option, substitute the chicken with sliced portobello mushrooms or tofu. Adding a squeeze of lime and a sprinkle of fresh coriander over the fajitas before serving can enhance their fresh, zesty flavour.
