Ingredients

  • Guacamole, to serve
  • 1 Onion sliced, large
  • Onion
  • small handful Fresh coriander chopped
  • Olive Oil
  • Garlic
  • Salsa, to serve
  • 2 Chicken Breasts sliced into strips
  • Sour Cream, to serve
  • 2 Mixed Peppers sliced
  • Black Pepper
  • 8 Tortillas
  • 2 tbsp Fajita Seasoning
  • 1 Lime cut into wedges
  • Salt

  1. Preheat your oven to 220°C.
  2. Slice the chicken breasts into strips and toss with fajita seasoning.
  3. Slice the peppers and onions, and spread them out on a sheet pan.
  4. Add the seasoned chicken strips to the sheet pan with the vegetables.
  5. Roast in the oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Warm the tortillas in the oven during the last few minutes of cooking.
  7. Serve the chicken and vegetables with warm tortillas, guacamole, salsa, and a dollop of sour cream.

Notes

For a vegetarian option, substitute the chicken with sliced portobello mushrooms or tofu. Adding a squeeze of lime and a sprinkle of fresh coriander over the fajitas before serving can enhance their fresh, zesty flavour.
