Ingredients
- 1 Onion finely chopped, medium
- 500g Beef ground
- 2 cloves Garlic minced
- Vegetable Oil for brushing
- 1/2 teaspoon Paprika
- 1 tablespoon Olive Oil
Method
- Heat the olive oil in a large pan over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes.
- Add the ground beef to the pan and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another 2 minutes.
- Remove the pan from heat and stir in the shredded cheese until melted and well combined.
- Preheat the oven to 200°C (180°C fan) and line a baking tray with parchment paper.
- Warm the tortillas in the microwave for about 20 seconds to make them pliable.
- Place about 2 tablespoons of the beef mixture onto each tortilla and roll them up tightly. Secure with toothpicks if necessary.
- Arrange the taquitos seam-side down on the baking tray. Lightly brush with vegetable oil.
- Bake in the preheated oven for 15-20 minutes, or until golden and crispy.
- Serve hot with your favourite toppings such as sour cream, guacamole, and salsa.
Notes
For a healthier option, you can air-fry the taquitos at 200°C for 10-12 minutes or until golden and crispy. Ensure the tortillas are warm before rolling to prevent them from cracking.
