Classic Huevos Rancheros
A traditional Mexican breakfast dish featuring eggs served on tortillas and topped with a flavourful tomato and chilli sauce. Perfect for a hearty start to your day.
Ingredients
- Salt to taste
- 4 Egg
- 1 Onion finely chopped
- 2 tbsp Olive Oil
- 2 Garlic minced, cloves
- Coriander chopped (for garnish), fresh
Method

- Heat the olive oil in a large pan over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the garlic, red pepper, and green chilli, cooking for another 2-3 minutes until fragrant.
- Add the tinned tomatoes, cumin, smoked paprika, and a pinch of salt. Simmer for 10-15 minutes, allowing the sauce to thicken.
- In a separate pan, heat a little oil and lightly fry the tortillas until they are crispy. Set aside.
- In the same pan, fry the eggs to your liking (sunny side up is traditional).
- To assemble, place each tortilla on a plate, top with the tomato sauce, and then place a fried egg on top.
- Garnish with chopped coriander, avocado slices, and crumbled feta cheese. Serve immediately.
Notes
Huevos Rancheros is a versatile dish. You can add beans or chorizo for extra protein. Adjust the chilli to your taste if you prefer more or less heat.
