Classic Huevos Rancheros

A traditional Mexican breakfast dish featuring eggs served on tortillas and topped with a flavourful tomato and chilli sauce. Perfect for a hearty start to your day.

Ingredients

  • Salt to taste
  • 4 Egg
  • 1 Onion finely chopped
  • 2 tbsp Olive Oil
  • 2 Garlic minced, cloves
  • Coriander chopped (for garnish), fresh

Method

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the garlic, red pepper, and green chilli, cooking for another 2-3 minutes until fragrant.
  4. Add the tinned tomatoes, cumin, smoked paprika, and a pinch of salt. Simmer for 10-15 minutes, allowing the sauce to thicken.
  5. In a separate pan, heat a little oil and lightly fry the tortillas until they are crispy. Set aside.
  6. In the same pan, fry the eggs to your liking (sunny side up is traditional).
  7. To assemble, place each tortilla on a plate, top with the tomato sauce, and then place a fried egg on top.
  8. Garnish with chopped coriander, avocado slices, and crumbled feta cheese. Serve immediately.

Notes

Huevos Rancheros is a versatile dish. You can add beans or chorizo for extra protein. Adjust the chilli to your taste if you prefer more or less heat.
