Classic Chilli Con Carne
This traditional chilli con carne is a robust and flavourful dish featuring minced beef, kidney beans, and a blend of spices, topped with cheese and sour cream for added richness.
Ingredients
- 1 can Tomato diced
- 2 Beef Stock cube
- 1 tsp Paprika
- 1 Onion chopped, large
- 2 cloves Garlic minced
- 500g Beef minced
- Olive Oil for cooking

- In a large pot, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened.
- Add the minced beef, breaking it up with a spoon, and cook until browned.
- Stir in the red bell pepper, kidney beans, diced tomatoes, tomato paste, crumbled beef stock cube, chili powder, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, stirring occasionally.
- Stir in beef stock as required to stop it drying out.
- Serve hot, garnished with grated cheddar cheese, a dollop of sour cream, and chopped cilantro.
Notes
You can adjust the amount of chilli powder based on your preference for heat. This dish tastes even better the next day as the flavours develop more. For a richer, more complex flavour, try adding a piece of dark chocolate or a spoonful of cocoa powder during the last 30 minutes of cooking. This adds depth and a subtle hint of bitterness that complements the spices beautifully.
