Chicken Skewers with Guasacaca

These Chicken Skewers paired with Guasacaca, a vibrant Venezuelan avocado-based sauce, offer a perfect balance of smoky and fresh flavours. The chicken is marinated in a blend of lime juice, Worcestershire sauce, and spices, then grilled to perfection.

The Guasacaca sauce, made with avocados, herbs, and a tang of lime, complements the chicken beautifully, adding a creamy texture and a burst of freshness. This dish is ideal for outdoor gatherings or a family BBQ.

  1. In a large bowl, combine the chicken, juice of 1 lime, 1 tablespoon olive oil, Worcestershire sauce, garlic, cumin, smoked paprika, salt and black pepper. Mix well and marinate for at least 1 hour in the fridge.
  2. If using bamboo skewers, soak them in water for 20 minutes. Thread the marinated chicken onto skewers.
  3. Grill the skewers over high heat for 10–12 minutes, turning every few minutes, until lightly charred and cooked through.
  4. For the guasacaca, blend avocado, red onion, green pepper, jalapeño, coriander, parsley, juice of 1 lime, red wine vinegar and remaining olive oil until smooth.
  5. Add 2–4 tablespoons of water to loosen to a spoonable sauce. Season to taste with salt and black pepper.
  6. Serve the hot chicken skewers with the guasacaca on the side.

Ingredients

  • 2 Lime juiced
  • 5ml Smoked Paprika
  • 45ml Olive Oil divided
  • 5ml Salt plus extra to taste
  • 120ml Coriander roughly chopped
  • 1 Jalapeno seeded if preferred
  • 15ml Red Wine Vinegar
  • 120ml Parsley roughly chopped
  • 3 cloves Garlic roughly chopped
  • 1/2 Red Onion roughly chopped
  • 800 g Chicken Thighs boneless skinless cut into chunks
  • 5ml Ground cumin
  • 3ml Black Pepper plus extra to taste
  • 2 Avocado ripe
  • 2-4 tbsp Water to loosen sauce as needed
  • 1/2 Green Pepper roughly chopped
  • 15ml Worcestershire Sauce

Notes

Marinating the chicken for longer will enhance the flavours. If barbecuing isn't an option, these skewers can also be cooked under a grill.
