Bacon, Mushroom & Soft Cheese Toastie
This bacon, mushroom and soft cheese toastie is quick comfort food: crisp bread, smoky bacon, and mushrooms cooked until the pan is dry and golden.
Spread with soft cheese and toasted until the centre is properly melty. Ideal for lunch or a no-fuss supper.
Ingredients
- 4 slices Bread
- 120 g Soft Cheese (cream cheese style)
- 1 tbsp Butter for the outside
- 200 g Mushrooms sliced
- 4 rashers Bacon
- 1 clove Garlic finely grated or minced
- Black Pepper, to taste
- Salt, to taste
Method

- Cook the bacon in a pan (or under the grill) until crisp, then set aside.
- In the same pan, cook the mushrooms until their moisture has evaporated and they’re golden. Stir in the garlic for 30 seconds and season with pepper (and a little salt if needed).
- Spread soft cheese over one side of each slice of bread.
- Divide bacon and mushrooms between two slices, then top with the remaining bread to make sandwiches.
- Butter the outside of the bread. Cook over medium heat, pressing lightly, until deeply golden on both sides and the filling is hot and melty.
- Serve immediately.
Notes
Cheese swap: cream cheese or Boursin works beautifully. Add a small handful of grated cheddar if you want it extra gooey.
Keep it crisp: cook the mushrooms until their moisture is gone before you build the toastie.
Heat: a pinch of chilli flakes is great with the mushrooms.
