Asian Turkey Salad with Peanut Sauce

Ingredients
- 5cm/2in piece Ginger peeled and grated, fresh
- 1 tbsp Soy Sauce
- 1 tbsp Vegetable or groundnut oil
- 2 tbsp Soy Sauce
- 3 Garlic crushed or grated, cloves
- 1 Carrot julienned, large
- 1 Courgette julienned, large

- Marinade the turkey with soy sauce, lime juice, sugar, chilli powder, and five-spice.
- Cook shallots in oil, then add garlic, ginger, and chillies.
- Add remaining sauce ingredients, simmer until reduced, and let cool.
- Arrange vegetables on a platter, coat turkey with sauce, place on top, drizzle with more sauce, and garnish with chillies, herbs, and peanuts.
Notes
If you prefer a milder salad, adjust the amount of red chillies used in the recipe. This salad can be served warm or at room temperature, depending on your preference.
