Pressure Cooker Bolognese

Pressure Cooker Bolognese is a hearty, flavourful dish that is both comforting and satisfying. Made with a mix of quality beef mince, rich tomato sauce, and a touch of aromatic herbs, this quick and easy pressure cooker recipe is perfect for a cosy dinner amidst a busy week.

Great served over pasta or as a filling for lasagne.

Ingredients

  • 500g quality minced beef
  • 1 tablespoon olive oil
  • 1 diced onion
  • 2 diced carrots
  • 2 sticks of diced celery
  • 2 cloves minced garlic
  • 2 tablespoons tomato paste
  • 4 grated ripe tomatoes
  • 375ml beef stock
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 125ml red wine

Instructions

  1. Heat a tablespoon of olive oil in your pressure cooker and brown the minced beef, then remove and set aside.
  2. In the same cooker, sauté the diced onions, carrots, and celery until softened.
  3. Add minced garlic, stirring for a minute until fragrant.
  4. Return the minced beef to the cooker, add in the tomato paste, grated tomatoes, beef stock, bay leaf, oregano, salt and pepper.
  5. Seal the pressure cooker and cook on high pressure for 20 minutes.
  6. Release the pressure naturally, then stir in the red wine and simmer open for another 10 minutes to reduce the sauce.
  7. Check seasonings, then serve this delicious bolognese sauce over your favourite pasta.

Notes

When selecting wine for your bolognese, choose one that you’d enjoy drinking – a decent merlot or malbec can elevate the dish’s flavour. If you don’t have fresh tomatoes, canned ones can substitute in a pinch.
